the chef After working under some of Britain’s most famous chefs, owner/chef Peter Stubbs spent 15 years in France, the US and the Caribbean as “Private Chef to the Rich and Famous” on their yachts. He has entertained such dignitaries as David Rockefeller, Vicente Fox (the current Mexican President), David Bowie, Mick Jagger, Robin Williams, Roman Abramovich, Irene Yeltsin and Boris Berezofski – before spending the last 5 years with Mexican billionaire Alberto Bailleres based in Mexico City. In 2004, Peter returned to ‘terra firma’ and realized his goal of opening ‘cinco’. The name ‘cinco’ (which means 5), was chosen to represent the five elements: Wood, Fire, Earth, Metal and Water – which are essential to cooking, as well as achieving balance and harmony in life according to the principles of Feng Shui.
